I'm a Google Local Guide and have traveled all over from fine dining to home in the wall to food trucks.
This place is delicious and the chef really knows how to pair food well.
The only feedback I have is that when someone asks for something, it's not no problem, it's my pleasure or you're welcome.
And, most importantly, introduce yourself and ask me if it's my first time.
I don't want to yell hey you over the crowd to get your attention or I want to have a great experience, so tell me what's popular and why you chose the menu items you did for restaurant week.
I overheard one waiter sharing this information to another table, but all I got was you'll have a great experience.
Sell me on why I should stay in my seat.
Last but if information, don't ask me if I want something to drink, offer me three choices, one low end, medium priced and higher cost for me to choose from.
You'll thank me if you do this with EVERY customer.

In town for a conference and this is a wonderful place for solo dining.
The bar is large and comfortable but not too loud.
Service was excellent, the bartenders were attentive and friendly.
The food was interesting and beautiful.
Heirloom beet salad was hands down one of the best I have ever had (and I get a beet salad anywhere I can).
Jerusalem Artichoke Soup was gorgeous but disappointing.
I barely tasted the Jerusalem Artichoke because the parsley oil was so overwhelming.
I believe if the ratio of parsley oil to artichoke changed it could be amazing. Very interesting wine list with Maryland and Virginia wines.
I love being able to taste local wines.

Unexpected…it’s been a difficult journey to find quality food nowadays and Vermillion exceeded my expectations. Our server was well informed of the food, how it’s prepared and where it’s sourced from.
Far exceeded many of Michelin stars’ staffs that have no clue about their dishes these days… My favorite was their mushroom dish, its seasonal item I believe but it’s a must-try. Excellent food requires attention from where the ingredients are being sourced, freshness, preparation, and vermillion killed it! Thank you for this delicious experience.
I’d give it 1-star Michelin if I could.
