I stopped by Subway at the UNM Hospital, and it was a mixed experience. On one hand, the convenience of grabbing a quick bite while waiting for my appointment was great. The menu offers healthy options, including vegan and vegetarian choices. I ordered the Veggie Delight, which was fresh and served on toasted whole wheat bread.
However, the service left much to be desired. There was a long wait, and the staff seemed overwhelmed. I noticed that some veggies looked a bit past their prime.
