Nestled in The Podski Food Cart Lot, Mother Shuckers Bend offers a laid-back outdoor atmosphere perfect for a quick seafood fix. I recently tried their PNW pan-fried oysters, which were simply divine - crispy, juicy, and served over fresh arugula with a light olive oil dressing.
