Las Catrinas Food Truck is a hidden gem in Fort Collins! 🌮 I stopped by for lunch and was instantly drawn in by the smell. The al pastor and carne asada street tacos were out of this world - super soft tortillas wrapped around tender, flavorful meat.

The birria tacos stole the show, especially when paired with their rich consomé. The service was friendly and quick, making it perfect for a solo bite or a casual hangout with friends.

I can't wait to go back and try their breakfast burrito! Definitely a must-visit! 😋✨
