One of those meals I feel like I should have paid more for the given quality and amount. My friend and I split a half Jerk chicken over rice & beans, potato salad and plantains.Jerk chicken was impressively moist, appropriately salty and well seasoned; the runny jerk sauce on the side provided some extra kick; the skin charred black from the grill.Rice & peas were soft and equally flavorful.Conch fritters' mix was tasty and fried well without dripping in grease although a few had possibly overcooked, rubbery conch bits.Otherwise it was a good batter. My friend from Chicago has been coming for years and you can tell from the decor and space. They have some beautiful black & white photographs worthy of a gallery show.No vibe is the vibe—a good sign. This place is a gem.
Ordered a half chicken dinner with cabbage and Mac and cheese. My dark meat was still pink and undercooked.1st and last time trying this.
Owner response
Sorry you didn't have a good experience. But rest assured, your chicken wasn't unsafe. Unlike most restaurants, we don't use a standard grill. We use a coal smoker to cook all of our chicken. The benefit is that the meat tends to be much more tender and moist, and the skin holds on better to the meat to seal in more flavor. But because it's purely by smoke, the fire doesn't come in direct contact with meat (like a standard grill)....there can be what's called a pink "smoke ring" to some of the chicken. But the meat is done. It's cooked/smoked for 3-4hours and temperature is taken as well.I'm the person that cooks all the chicken, so letting you know my process. It's just a different process than a regular charcoal grill. We'll gladly give you a refund or another meal on us.Just reach out to us next week (Closed next Friday) and we'll take care of you. Thanks for trying us out. This restaurant cooks their chicken the same way.We post a notice inside the restaurant as well: https://truebarbecue.com/bbq-101/smoked-chicken-pink/
Best grill chicken in town, a special recipe from Belize “Jerk Chicken” has an amazing blend of spices. The sides compliment the chicken.Even though the restaurant is not fancy but the quality of food and taste makes you forget where you are. They have a take out option and you can easily warm it up for the same taste as its served fresh at the restaurant
