Blue Coyote Grill offers a delightful escape to authentic Mexican cuisine! The vibrant atmosphere instantly drew us in. I indulged in the mahi tacos, which were perfectly grilled and bursting with flavor. My partner enjoyed the no-jalapeño guacamole, served fresh and creamy - so good! The cocktails were surprisingly refreshing too; the tequila Old Fashioned was a unique touch. Portions are generous, easily warranting a take-home box. The live music added a lovely backdrop to our meal. A must-visit in Palm Springs for sure! 🌮
